Apple and Avocado Sunshine Salad with Candied Pecans

Ingredients:

Avocado: Meijer, $1. — Baby carrots: Meijer, $1.25.

Diamond pecan halves: Meijer, $4.49.

Pantry ingredients: Celery, cinnamon, egg, onion (recommend green or chives), salt, vanilla extract, white sugar.

For candied pecans:
NOTE: Amounts for candying pecans is to do the whole package; you will not need that much for the salad.
Mix together 1/4 cup white sugar, 3/4 teaspoon ground cinnamon, and 1/2 teaspoon salt in a small bowl. In a medium bowl, whisk one egg white, 1/2 teaspoon vanilla extract, and 1/2 tablespoon water until light and frothy. Add pecans and coat well. Add sugar mixture and mix to evenly coat pecans. Bake in a 250 degree oven, for about 1 hour (or until nicely browned), stirring nuts about every 10-15 minutes.
For salad: Dice the avocado, one rib celery, one or two apples (depending on size), and about 1/4 cup onion. Shred a 6-7 baby carrots, and cut a large handful of grapes in half. Peel, deseed, and section one or two tangerines. Toss all elements with salad greens and dressing of choice. Top with candied pecans and a sprinkle of shredded cheese.
Serve salad with freshly baked biscuits.
