Let’s Cook!

Kickin’ Spice Rub: Recipe makes more than needed, store remainder in an airtight container. Adjust to spice preference. — 2 tablespoons each chili powder, cumin, and paprika, 1 tablespoon each garlic and onion powders, 1/2 tablespoon oregano, 1 teaspoon each cayenne and salt. Mix well; taste and adjust if needed.

Chicken: Remove skin and liberally apply spice rub. Oil grill grate and heat to medium-high. Grill approximately 6 minutes per side, or until juices run clear. Allow to rest, then slice and serve over salad.  

Salad: Mix 1 cup ranch dressing with 1/4 teaspoon each (or to taste) cayenne and chili powder. Drain corn well. Dice 1 cup tomatoes, 1/4 cup each onion and sweet peppers, and dice avocado. Build salads in bowls over greens with ready ingredients, adding warm chicken, and topping with crumbled cheese slices. Sprinkle with crushed tortilla chips. Enjoy with chips and salsa or dip and fresh grapes.
