Three Meals You Should Make This Week with These Meijer Deals

Potato and Bacon Soup over Smoked Sausage

Ingredients:

Russet potatoes (10 lb bag): Meijer, $2.49.

Yellow onions (3 lb bag): Meijer, $1.

Pantry ingredients: Celery, flour, heavy cream, milk, parsley, pepper, salt; Optional: chili or Cajun spice.

To complete meal:

Let's Cook!

Dice 6-8 slices of bacon. Cook in the bottom of a large soup pot until crisp. Remove, set aside. Keep some of the rendered bacon fat to sauté 1 diced onion and 2-3 diced celery stalks for 3 minutes. Add 6-8 potatoes (diced small), and cook for 4-5 minutes, stirring frequently. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, and 8 cups chicken broth. Bring to a boil and cook until potatoes are tender. Reduce heat. Whisk together 2 1/2 tablespoons flour and 1 cup milk. Add to soup and incorporate well. Simmer soup for another 5-7 minutes until it thickens some and veggies are soft.

Carefully using a ladle or a measuring pitcher, scoop out enough soup to fill a blender 3/4 of the way. Blend until smooth. Set aside. (Optional: Repeat with all soup. OR leave some unblended for a more chunky soup.) Once you've blended the amount of your choice, return to the soup pot. As the removed soup warms through again, add 1/2 cup heavy cream. Mix well. Add a sprinkle of minced parsley. (If using dry parsley, give it some time to rehydrate before eating.) If desired, add a sprinkle of chili or Cajun spice.

Serve soup hot, topped with ready bacon, over browned smoked sausage. Compliment with warm Texas toast.

This recipe freezes beautifully. Double, or even triple, it to freeze for another time. Simply omit the mushrooms until reheating, and cook the pasta al dente. Incorporate the fresh sliced mushrooms about halfway through the heating time when warming from frozen.
