Spicy Peanut Chicken Wraps

Ingredients from Meijer:
Boneless, skinless chicken breasts (need about 2 pounds): $1.88 per pound.

Pantry ingredients: brown sugar, cayenne pepper, carrot, garlic (minced), honey, fresh cilantro, lemon juice, onion (preferably green onion), rice wine vinegar, sesame oil, soy sauce.

Wraps: Cut fresh chicken into small cubes. Heat 2 tablespoons oil in a large skillet, and lightly brown chicken on all sides, cooking until center of cubes are no longer pink. In a bowl, combine 1/2 cup peanut butter, 2 tablespoons each soy sauce, sesame oil, cayenne pepper, and honey. Mix in 1 teaspoon each minced garlic and sesame oil. Taste peanut sauce and adjust for spiciness and sweetness preference. Chop 2 cups cabbage, and 1/4 cup each onion, carrot, and fresh cilantro. To make wraps, fill warmed tortillas with chicken, sauce, and veggies.
Fruit dip: Blend together one 6 ounce cup of vanilla yogurt with 2-3 tablespoons brown sugar and a few drops lemon juice. Adjust to taste.
Serve wraps with fresh fruit and fruit dip.
