Chicken Noodle Casserole

Ingredients:

Fresh boneless, skinless chicken breasts: Meijer, $2.29 per pound.
Campbell's condensed soups ““ cream of mushroom and cream of chicken (need 1 of each): Meijer, 59 cents each. ($1 on 5 coupon Campbellskitchen.com.)
Bird's Eye Streamfresh vegetables (family's choice; recommend broccoli or peas or mixed): Meijer, $1.67. (50 cents on 2 coupon September 14 SmartSource insert.)

Pantry ingredients: butter, milk, pepper, salt, sour cream.

Let's Cook!
Cook 2-3 chicken breasts with cooking method of personal choice. While preparing the chicken, dice 1/4 cup onion and sauté in a little butter until lightly caramelized and brown. After chicken is cooked, allow to rest, then cut into small pieces. Boil pasta in salted water until al dente; shock well in running cold water to stop further cooking. Beat together one can each cream of mushroom soup and cream of chicken soup, with 3/4 cup milk, 1 cup sour cream, and 1/4 teaspoon pepper. Mix together noodles, vegetables of choice, readied chicken and onion, and soup mixture. Pour in a large baking dish. Melt 1/2 cup butter and mix in 1 1/2 cup crushed crackers. Top casserole and bake in a 350 degree oven for 25-35 minutes, or until heated through and nicely browned.
Serve casserole hot with a side of fresh raspberries. Offer a frozen treat for dessert.
