Hummus and Spinach Stuffed Chicken with Butternut Squash and Apples

Ingredients:
Boneless, skinless chicken breasts: Meijer, $2.79 per pound.

Florida's Natural orange juice: Meijer, $3.
Pantry ingredients: Bread crumbs (or make your own by toasting bread and pulsing in a food processor), butter, cinnamon, eggs, flour, nutmeg, pepper, olive oil, salt.
To complete meal:

For stuffed chicken: If you need to make bread crumbs for the crispy chicken breading, make those first.
Pound the chicken into thinner breasts, with even thickness.
Tip: To make pounding the breasts less messy, place between two pieces of plastic wrap, or in a large, sealable bag. Once chicken is pounded, lay breasts out, and lightly salt and pepper. Place a few pieces of spinach (stems removed) on the chicken, and top with a couple tablespoons hummus. Tightly roll the chicken. Wrap in either aluminum foil or in plastic wrap, and close the ends. Place in the fridge to firm up.
Set the oven to heat up to 400 degrees.
For the breading, whisk together 4 egg whites and 1 tablespoon water. Place in a shallow dish. Have another shallow dish of flour, and one of your bread crumbs. Carefully remove the stuffed chicken breasts from their wrappings, and dredge through the flour, then coat with egg, then coat with bread crumbs. Heat 1/4 cup olive oil in a skillet, and brown the sides of the chicken. Then lay in a baking dish, and bake in ready oven for about 15 minutes.
Check doneness with a thermometer or by carefully slicing one stuffed chicken breast.
For the sauce: When chicken goes into the oven, place 1/2 cup each chicken stock and orange juice into a small saucepan. Simmer on medium heat to thicken into an orange sauce to serve with the chicken.
For the butternut squash and apples: Peel and slice one squash open, remove seeds. Slice into thin slices. Peel and core one large (or two medium) apples, then slice thinly. Place in a buttered baking dish, mixed together. Blend together 1/2 brown sugar, 1 tablespoon flour, 1/2 teaspoon salt, 1/4 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Cut in 4 cold tablespoons butter, to create a crumbly topping. Sprinkle over squash and apples. Bake, covered, for about 40-50 minutes, at 350 degrees. When squash is tender, it's ready to serve.
Enjoy stuffed chicken breasts over prepared rice, with squash and apples.
