Avocado Fish Tacos

Ingredients:

Meijer canned corn: Meijer, 33 cents.
Sweet bell pepper (family's choice of color): Meijer, $1.25.
Meijer Naturals diced tomatoes (recommend with chilies – optional): Meijer, 69 cents.
Kraft chunk cheese (recommend a white cheese): Meijer, $2.
Pantry ingredients: Cabbage (shredded), cilantro, lime juice, onion.
To complete meal:

NOTE: For the best salsa ““ make earlier in the day. The longer it chills, the better it tastes.
Quick homemade salsa: Dice 1/3 cup onion and 1/3 cup bell pepper. Thoroughly drain can of corn. Carefully drain tomato juice from canned tomatoes into a small bowl. Add taco seasoning from dinner kit, and 1 tablespoon lime juice. Whisk until dry seasoning is incorporated. Add tomatoes, drained corn, diced onion, diced bell pepper, and a small handful of chopped cilantro. Cover bowl and chill in refrigerator.
Cook fish in oven according to package directions. While fish bakes: peel, pit and slice avocado. Toss in 2 tablespoons lime juice to coat lightly. Shred 4 ounces chunk cheese. When fish is almost done, place taco shells in oven for a few minutes to warm through. (Set in a covered oven-safe dish ““ or wrapped in aluminum foil.)
Build tacos with fish, avocado, salsa, cabbage shreds, and shredded cheese. Drizzle with taco sauce from dinner kit (optional). Serve immediately with fresh grapes. Enjoy ice cream bars for dessert.
