Spatchcocked Herb Chicken: The spatchcock method cooks a whole chicken more quickly, and allows easier seasoning of the entire bird. In spatchcocking, you remove the backbone and breastbone, opening the chicken up like a book. (This is why it is sometimes also called butterflying.) To begin, rinse the bird, and pat dry with paper towel, then lay the chicken breast-side-down. Use poultry kitchen shears, or a sturdy knife, to remove the backbone by cutting from front to back, along one side of the backbone. Repeat on other side of the backbone, then lift it out. Pull chicken open, and repeat cutting to remove breastbone through the back. It's a triangular shape, so open the chicken up well enough to see it easily.

Line a pan with sides (like a jellyroll pan) with aluminum foil to simplify clean-up. Thinly slice an orange and cover the pan bottom. Add a few sprigs each rosemary and thyme. Rub butter under the chicken breast skin, then season entire chicken well with salt, pepper and paprika. Lay chicken, breast up, directly on the fruit and herbs. Roast on the middle oven rack at 375 degrees for about 45 minutes. (Or until an internal temperature of 165 degrees is reached in the thickest portion of the chicken.)

NOTE: Cooking time depends on the weight of the bird. Time approximated for a bird around 5 pounds. Adjust your cooking time, and watch progress closely.

Cheesy Rice: Cook rice according to package directions. Season with salt and pepper. Add a bit of butter (optional). Stir shredded cheese (amount to taste) into hot rice to melt.
Serve roasted chicken and cheesy rice with fruit cups. Offer dessert of choice for a sweet ending to a delicious, homemade meal.
