Chicken Fajitas with Mango Salsa

Ingredients:

Let’s Cook!

Chicken – Cut 1.5-2 pounds into thin strips. In a sealable container, blend 2 tablespoons each oil and lemon juice with whole packet of seasoning. Add chicken and turn to coat well. Refrigerate and marinate at least 1 hour, turning periodically.

Salsa – Dice one each large mango (or two small), one onion, and half of each bell pepper; cut kernels off corn cob; squeeze juice from lime (or about 3-4 tablespoons); chop 2-3 tablespoons fresh cilantro (or to taste). Mix everything together, adding 1 tablespoon lemon juice and diced jalapeno if desired. Blend and chill for at least 1 hour.

Wrap tortillas in aluminum foil, set in 350 degree oven to warm. Cut 1 onion and remaining halves of peppers into strips. Heat 2 tablespoons oil in a large skillet and sauté until tender-crisp. Remove. Add chicken to skillet. Cook just until no longer pink. Add onions and peppers back to skillet to rewarm. Serve hot in warmed tortillas, topped with fresh salsa. Have refried beans and Mexican rice on the side, along with extra salsa and chips.

If you cannot find cotija cheese, you can use parmesan – and although it isn’t exactly the same, or as authentic – it’s still very yummy! Some versions use mayo, (instead of butter) that has been spiced with red pepper, chili powder, and cumin, and then brushed on while grilling.
