Let’s Cook!
Finely dice 2-3 tablespoons onion. Carefully peel cucumber, then split lengthwise, to remove seeds with a spoon. Discard seeds. Finely dice cucumber, setting in a colander to drain. Blend together 6 ounces softened cream cheese, 3 tablespoons mayonnaise, 1-2 tablespoons dried dill (to taste), 1/2 tablespoon lemon juice, and a dash of salt. Fold in cucumber and onion. Spread on bagels (toasted or not, family’s choice), top with turkey, lettuce and sliced tomato.
Serve with string cheese and chips; offer ice cream bars for dessert.
