Southwest Inspired Corn and Bean Salad

Let's Cook!

For the spicy dressing: In a small bowl, start with 1/4 cup Ranch dressing, then add each ingredient to taste. (Because Ranch dressings vary in taste, you'll want to mix and taste as you go.) Ingredients to add: chili powder, garlic powder, onion powder, and hot sauce. Recommend starting with a sprinkle of each, then taste and adjust.

For the salad: In a colander, thoroughly drain and rinse beans, then corn. Sprinkle lightly with salt, and mix corn and beans well. Allow to sit. Grate one small (or one-third of a large) zucchini and several baby carrots. Then finely dice one-third to half of the bell pepper, and slice a handful of grape tomatoes. Toss all ingredients with romaine lettuce, topping with crumbled cheese and crushed tortilla chips.

For cheese quesadillas: Heat a skillet to medium-high heat, then lower to medium. Butter one side of a tortilla, then fold, filling inside with cheese. Gently brown each side of the tortilla, and melt the cheese.

Serve salad drizzled with dressing and warm cheese quesadillas on the side.
