Fresh baked Tilapia fish dinner with asparagus and Hollandaise sLemon-Garlic Tilapia

Ingredients:

Tilapia fillets: Meijer, $3.79 for 1 pound package.

Butter: Meijer, $2.50.

Nabisco Ritz crackers: Meijer, $2.50.

Pantry ingredients: Chili powder, garlic cloves, lemon juice, parsley, pepper, salt, rice.

Note: Be sure to fully thaw the fish prior to cooking. Use the package directions for safe thawing.

Place tilapia in a baking dish greased with a smear of butter (or use non-stick cooking spray). Salt and pepper fillets to taste, then lightly sprinkle with lemon juice. Melt 4 tablespoons butter in a small skillet, then sauté 3 minced garlic cloves, 2 tablespoons lemon juice, and 1 teaspoon parsley flakes until garlic is softened and fragrant, but not browned. Pour the lemon-garlic sauce over the fish and allow the fish to marinate for about 1 hour in the refrigerator. After fish is marinated, sprinkle with a mixture of a three crushed crackers and 1/4 cup parmesan cheese. Bake fish at 400 degrees for about 10 minutes, or until fish is flaky.

Serve fish and vegetables with rice, boiled in chicken broth and seasoned with chili powder (to taste). Offer gelatin or pudding for dessert.
