Chicken Shepherd's Pie

Ingredients:

Let's Cook!
Note: You'll need 1.5 pounds of already seasoned and roasted (or grilled) shredded chicken.
In a large pot of well-salted water, bring to a boil 2 pounds of quartered potatoes, either peeled or skin-on. Add 2-3 sliced cloves garlic (optional). Once potatoes are soft, drain and mash potatoes and garlic with butter, pepper, milk, and salt to taste.
Dice other vegetables to have about 1/3 cup each. (Adjust amounts to taste.) Don't forget onion. In a large skillet, give the carrots, onions, and celery a quick sauté, just to start them softening.
Layer evenly in a baking dish: chicken, veggies, a sprinkle each salt and pepper, soup, cheese slices, mashed potatoes. Bake at 400 degrees about 30 minutes, until browned and bubbling. If potatoes aren't browning, switch to the broiler for a few minutes.
Bake garlic bread while pie stands, then serve both with a cold glass of juice.
