Chicken Biscuit Pockets

Ingredients:
Pillsbury Grands biscuits: Meijer, $1.
Swanson premium chicken breast: Meijer, $1.50.

Organic green onions: Meijer, $1.
Organic baby carrots: Meijer, $1.25.
Organic whole or mini Bella mushrooms: Meijer, $1.67.
Kraft shredded cheese (recommend cheddar): Meijer, $2.
Pantry ingredients: Garlic powder, onion powder, pepper, salt; other vegetables of choice.
To complete meal:

Let's Cook!
Finely dice a small amount of each vegetable, adding any additional of choice. Blend together 4 ounces cream cheese and 1 tablespoon mayo with a few dashes each of garlic powder, onion powder, and pepper, until smooth. Taste and adjust, adding a dash of salt only if necessary. Mix well-drained chicken breast and finely diced veggies into seasoned cream cheese. Cut biscuit rounds in half thickness-wise to create 16 biscuit rounds. Then carefully stretch each.
Heat oven to 375 degrees, and lightly grease a muffin tin. Lay half the biscuit rounds in the muffin tin, stretching the dough rounds across the bottom and up the sides. Fill with chicken and cream cheese mixture, then add a sprinkle of cheese. Top with additional biscuit rounds, then gently press dough halves together to make a large muffin shape. Bake 17-20 minutes, or until browned and biscuit is completely baked. Remove and allow to cool slightly. Serve warm with hot soup of choice.
