Chicken Taco Salad

Let's Cook!

For taco salad bowls: Brush tortillas with olive oil. Drape over a small oven-safe bowl or metal bowl, and crisp in a 400 degree oven for about 5-10 minutes. Keep a close eye, and pull them out as soon as they begin to brown. Allow to cool.

For taco salad filling: Heat a large skillet with 1 tablespoon olive oil. Sauté 1/3 cup diced onion, 1/2 of the bell pepper (diced), and 1 cup frozen corn until the onion is nearly translucent. Add diced chicken strips, 1/4 cup water, 1 tablespoon chili powder, 1 teaspoon each chili powder, cumin, and paprika, 1/2 teaspoon each garlic powder and salt. Mix and simmer until liquid is absorbed and everything is hot.

Fill tortilla bowls with hot filling and top with diced tomatoes, lettuce mix, crunchy tortilla strips, sour cream, and salsa. Sprinkle lightly with lime juice (optional). Offer choice of dessert for a satisfying finish.
