New England Lobster Rolls

Let’s Cook!
Finely chop one rib celery, 1 tablespoon fresh chives, and 2 tablespoons fresh parsley. Chop any large chunks of imitation lobster meat into pieces 1/2 inch or smaller. Mix together meat, celery, chives, parsley, 1/2 cup mayonnaise, and 2.5 tablespoons lemon juice. Add salt and pepper to taste. Cover and refrigerate while you toast buns and ready green beans.
Split buns open and lightly toast. (Using a non-stick skillet with melted butter is recommended.) In a non-stick skillet, melt butter and sauté trimmed fresh green beans until tender-crisp. Season with salt and pepper.
Melt a couple extra tablespoons of butter and very lightly brush buns once more on the insides. Fill with chilled lobster roll filling. Serve immediately with sides of sautéed green beans and crackers. Offer fresh blueberries with whipped cream for dessert.
