On-the-Grill BBQ Chicken Grilled Cheese

Let’s Cook!
Delicious grilled cheese needs time – so don’t rush these sandwiches. Clean grill grates to minimize burnt bits sticking to the bread. Heat grill to low. Brush one side of each bread slice with mayo, and one side with barbecue sauce. The mayo will be on the outer sides, the barbecue on the inner sides. Layer meat, cheese, and thinly sliced tomato inside sandwiches. Place on grill, taking care to not put sandwiches in overly hot spots that could burn the bread. Turn sandwiches (and rotate if needed) to brown evenly, heat sandwiches, and melt cheese.
Serve hot with pickles and chips. Offer ice cream bars for dessert.
