Corn Mango Salad with Grilled Chicken

Sauté 1 minced garlic clove and the kernels from 3 ears of corn in 2 tablespoons oil until lightly browned. Place in a large bowl, allow to cool. Add one well-rinsed can of black beans, one peeled, pitted and diced mango (squeezing all the juice you can from around the pit), 1/2 cup chopped onion, 1/2-3/4 cup diced red bell pepper (amount to taste), 2.5 tablespoons lime juice, 2 tablespoons chopped cilantro, and 1/4 teaspoons each cumin and salt. Add finely diced jalapeno to heat preference. (Recommend starting with one or two teaspoons and tasting.) Mix well and refrigerate to allow flavors to blend. (Refrigerate a minimum of 30 minutes – and up to 9 hours.)
While salad chills, grill chicken, seasoned to taste. When chicken is almost cooked through, slice bread and brush with canola or vegetable oil, sprinkle with garlic powder, then grill in a clean spot, away from direct flames, to toast. Serve grilled chicken with corn-mango salad and grilled bread. Offer Klondike bars for dessert.
