Poached chicken: Roughly chop one (small) each: sweet onion, carrot, and celery rib. In a saucepan or deep skillet, bring to a boil 6 cups chicken broth, the diced vegetables, 1 tablespoon each parsley and garlic powder, and 1/4 teaspoon thyme. Once it’s boiling, immediately reduce heat to very low, and gently poach the chicken until firm to the touch (about 20 minutes). Pull the pan from the heat, but leave in chicken and liquid. After 30-45 minutes cooling time, strain and refrigerate chicken stock for another use, and shred chicken.
Whisk 3/4 cup mayonnaise, 1.5 teaspoons lemon juice, 1 teaspoon each Dijon (or other spicy) mustard and salt, and a dash of pepper. Finely dice one small celery rib and 1/4 cup (or to taste) sweet onion; slice a few handfuls of grapes in half. Add veggies, fruit, chicken, 1/2 teaspoon dill, and 2 tablespoons parsley, mix well. Cover and chill. Crisp 2 bacon strips in a skillet. Cool, crumble, and mix in bacon and a handful of crushed pecans (about 2 tablespoons) before serving.
