Fresh salsa: Dice tomatoes, avocado, one-half of a small onion, and 1 small jalapeno (removing seeds to control heat). In a colander, thoroughly rinse can of black beans and 1.5 cups frozen corn (to thaw). Coarsely chop 1 cup cilantro. In a medium bowl, combine 4 tablespoons olive oil, 3.5 tablespoons lime juice, 1 teaspoon minced garlic (3/4 teaspoon if powdered), and 3/4 teaspoon salt. Add in veggies, and mix. Taste and adjust if needed, then cover and refrigerate.
Fajitas: Cut chicken off bone and into thin, short strips. Slice bell pepper and second half of onion into strips. Combine taco seasoning, 2 tablespoons oil, and 1 tablespoon lime juice in a bowl and coat chicken and vegetables. Place in a baking dish. Bake for 18-20 minutes at 400 degrees, or until chicken is cooked through.
Fill warm tortillas with hot fajita mix and top with fresh salsa and cheese. Serve with rice (prepared according to package directions).
