Grilled Green Tea Pork Kabobs over Rice

Green Tea Marinade: Boil 7 cups water, then allow to cool slightly. Add 10 green tea bags, and the chopped ginger. Cover and steep for 15 minutes. Remove tea bags and cool liquid completely. Prep pork loin by trimming and cutting 2 pounds into bite-sized pieces. Place into a sealable bag or large lidded bowl. Add the sliced green tops of half the onion bunch. (Reserve whites of onions.) Add tea and seal. Refrigerate a minimum of 4 hours.
If you’ll use wooden skewers, soak them in water first, so they don’t catch fire. Skewer pork and white parts of onions. Sprinkle liberally with salt, add pepper to taste. Discard marinade. Allow meat to raise to room temperature before grilling. Brush grill grate with olive oil and grill, turning frequently, until center of pork has just a blush of pink.
Green Tea Rice: Make like regular rice, but add 4 green teabags to 2 cups uncooked rice. In a small saucepan, on very low heat, dissolve 1/4 teaspoon salt and 4 tablespoons each sugar and rice vinegar in 2 tablespoons water. Remove from heat and gently mix into cooked rice.
Serve kabobs and rice, sprinkled with a few remaining green onion pieces, immediately with vegetables.
