Braised BBQ Pork Country Ribs

Ingredients:
Pork shoulder bone-in country style ribs (need 3-4 pounds): Meijer, $1.39 per pound.

Let’s Cook!
Heat 2 tablespoons oil in a large skillet that can then also go into the oven. (If you do not have one, or one large enough, you can brown in one skillet and braise in a roasting pan.) Trim and pat ribs dry. Sprinkle with salt and pepper. Brown the ribs on all sides in the heated oil. Once browned, arrange the ribs and pour in enough chicken broth to reach about halfway up the ribs. Cover and braise ribs in a 350 degree oven until they begin to get tender, about 1 hour. Remove from oven, pour out liquid, coat ribs with barbeque sauce, and cook for another 30-45 minutes until completely tender and sauce caramelizes on ribs.
Boil or grill corn on the cob in the last 30 minutes of ribs cooking. Allow ribs to rest a few minutes, then serve hot corn and ribs with pickles, crackers and cheese, and cold glasses of tea.
