Spicy BBQ Ranch Chicken Salad

Ingredients:
Fresh thin sliced boneless, skinless chicken breasts (need 1.5 pounds): Meijer, $3.59 per pound.

Let’s Cook!
Dressing: Peel, pit, and slice avocado. Mash with 1/2 teaspoon each garlic powder and onion powder, sprinkle with red pepper (to taste), mix until nearly smooth. Add 1/2 cup ranch dressing and 1/4 cup barbecue sauce. Blend well, taste, and adjust seasoning.
Slice chicken into small strips. Place in a large nonstick skillet, sprinkle lightly with chili powder, garlic powder, onion powder, and salt. Add a couple tablespoons water to the skillet, cover skillet, and cook on medium heat, stirring often, until chicken is no longer pink. If needed, add a little more water or spice as you go. In a colander, drain beans. Add 1/3 of the frozen corn bag. Mix and rinse the beans, and thaw the corn, under cool running water. Sprinkle lightly with salt, leave to drain. Dice 3/4 cup tomatoes and 1/4 cup onions. Compose salad of lettuce, chicken, carrot, beans, corn, onion, tomato, and shredded cheese. Top with dressing and tortilla strips.
Serve salad with gelatin or pudding for dessert.
