Three Meals You Should Make This Week with These Meijer Deals

 

Pineapple Glazed Pork Loin

Ham is traditional for Easter, but perhaps your four-plus would like to try a different cut of meat – and for less than $11. Or, you can take advantage of coupons and store incentives, and change up tradition for around $9.33!

 

Ingredients:

All natural center cut half boneless pork loin (suggest about 3 pounds): Meijer, $1.79, priced per pound.

Pantry ingredients: brown sugar, cornstarch, olive oil, pepper, salt, soy sauce, vinegar.
To complete meal:

Let’s Cook!

Heat 2 tablespoons olive oil in a large skillet. Salt and pepper, then brown all sides of the pork. Set into a roasting pan. Roast for 40 minutes, at 350 degrees, basting the pork occasionally with the juices.

About 30 minutes into roasting, mix together 32 ounces chicken broth, 3 tablespoons soy sauce, and 2 tablespoons vinegar in the skillet and bring to a boil. Pour over pork at the 40 minute mark. Continue cooking and basting pork for about 20 minutes more, or until no longer pink, and a meat thermometer reads 145 degrees F. Remove from the oven, transfer pork to a platter, loosely cover with foil, and allow to rest. (Recommend putting in the crescents now.)

Taking the roasting pan, loosen the tasty bits from the bottom, and pour with juices into a skillet. In a separate bowl, blend 4 tablespoons cornstarch with 2 tablespoons cold water, then add 4 tablespoons brown sugar and the can of pineapple. Mix well. Add to the skillet and heat, stirring often, until the mixture boils. Remove from heat and pour over the resting pork. Serve after glaze has cooled to a safe eating temperature.

Along with the pork loin, offer veggies of choice and warm crescent rolls.
