Soft and Crunchy – Two Layer Tacos

Let's Cook!
Brown the beef in a skillet, then drain. In a separate pan, set refried beans on low heat to warm through. Remember to stir beans occasionally.

Make 1 cup (total when prepared) rice according to package directions. Once rice is done, add to skillet with drained beef. Add un-drained can of tomatoes (you'll want the juice from the tomatoes) and 1/4 cup water. Mix in 1 tablespoon chili powder, 1 teaspoon each salt, pepper and cumin, 1/2 teaspoon paprika, 1/4 teaspoon each garlic powder, onion powder, and crushed red pepper flakes. Mix well and simmer until tomatoes are warmed through, liquid is absorbed, and everything is well-seasoned.

Warm soft tortillas in the microwave or in the oven to soften them. Spread soft tortillas with a thin layer of refried beans. Wrap around a hard shell taco and then fill tacos with hot taco mixture. Top with shredded cheese and lettuce or lettuce blend.

Serve immediately with fresh strawberries on the side.
