Stuffing Meatballs or Meatloaf: Using 1 cup already prepared stuffing, mix with 1 large egg, 1 cup milk, and 1.5-2 pounds ground beef. If making meatballs, roll into balls, and brown on all sides in a large skillet. Be sure they are cooked through, then use right away, or cool and freeze for later. If making a meatloaf, press into a loaf pan, and bake at 350 degrees for 40 minutes. Temporarily remove the meatloaf from the oven to pat or drain the excess grease and add your topping of choice; a ketchup blend, barbeque sauce, or a mustard blend. Once topped, return to the oven for another 20 minutes to finish cooking and caramelize your topping.
Cranberry shakes, smoothies, muffins: Cranberry sauces or dressings are very versatile. Blend with vanilla ice cream and a splash of milk for a seasonal shake. Blend with vanilla yogurt and a splash of apple juice for a tart and tasty smoothie.
Cranberry muffins: In a large bowl, mix together 2 cups flour, 3 teaspoons baking powder, 1/2 teaspoon each salt and cinnamon, and 1 cup sugar. In a small bowl, beat together 1/4 cup vegetable or canola oil, 1 large egg, 3/4 teaspoon vanilla, and 1 cup milk. Add the wet ingredients to the dry ingredients a little at a time, mixing well. Now, either gently mix in 1-1.5 cups cranberry sauce or dressing ““ or plan to make “surprise” muffins by layering muffin mix, cranberry sauce, and muffin mix again. Either way, be sure to grease the muffin tin, then fill cups 3/4 full. Bake at 400 degrees for 20 minutes, or until a toothpick inserted in the center comes out clean.
Loaded Twice-Baked Potatoes: Mix into mashed potatoes your ingredients of choice, such as: crispy, crumbled bacon, shredded cheese, steamed veggies from leftover veggie trays (like broccoli and/or cauliflower), and chives or sautéed onion. Mix in ingredients, with 1/2-1 cup sour cream (depending on potato amount), and bake in a 350 degree oven for about 1 hour (or until hot, and top is golden brown).
If you have sweet potatoes or yams, ingredient suggestions include apples, walnuts or pecans, and pineapple. If the potatoes need some added moisture, you can add a little milk or even a few tablespoons cream cheese.
